Recipe Sharing!

Back by popular request, here's another recipe that is incredibly easy to make, very healthy, and so delicious! Personally, I hate spinach but somehow this recipe makes it taste good...

Spinach Cheese Pie Egg Bake

Spinach Cheese Pie Egg Bake

1 cup cooked and well-drained frozen chopped spinach
2 tablespoons grated parmesan cheese
2/3 cup cottage cheese (milk may be substituted)
2 eggs
1/2 teaspoon salt
Dash of pepper and garlic powder

Combine all ingredients into a bowl and mix. Transfer to an 8-inch pie pan that has been sprayed with a nonstick cooking spray. Bake at 350 degrees until firm, about 40 minutes. Makes about 2 servings.

  2. It can be breakfast food or it can be made for a dinner- I've done both. And yes, it can be frozen. I usually freeze individual servings and then just toss them in the microwave to reheat them!
